With this simple salad recipe by your side, there’s no excuse to not EAT YOUR VEGGIES!
The veggies listed are ideas… you can use any firm ones you like. Beware of the soft ones: they don’t do well with a food processor…unless you want mush (or cut those by hand).
5-Minute Rainbow Slaw Salad
Ingredients
- Carrots
- Apple
- Jicama
- Red Cabbage
- Green Cabbage
- Zucchini
- Summer Squash
- Cucumbers
- Lemon Juice
- Orange Juice
- Olive Oil
- Salt
- Pepper
Dressing:
Instructions
- Cut all veggies on #2 cone on the Saladmaster, or with the shredder attachment on your food processor. You can use a box grater as well, but its not nearly as fast.
- Make dressing directly in bowl with the zest and juice of lemon, orange and finish with olive oil, salt and pepper.
