How to Make Paleo Beef Stew


  • 2 pounds beef stew meat
  • 1 tsp fine sea salt
  • 1/2 cup butter, bacon fat, or beef tallow
  • 2 medium onions, cut into large dice
  • 1 head garlic, peeled and cloves left whole
  • 3 medium carrots, peeled and cut into large dice
  • 3 medium celery stalks, cut into large dice
  • 1 cups dry red wine
  • 16 ounces diced tomatoes
  • 1/4 tsp freshly ground black pepper
  • 4 whole dried bay leaves
  • 3 tbsp combo of fresh thyme, rosemary and sage
  • 2 tsp lemon juice or vinegar, optional


  1. Season beef generously with salt and pepper.
  2. In a heavy, large ovenproof pot over moderately high heat (unless slow cooker heats high), heat 1/4 cup fat until smoking.
  3. Working in 2 batches (wipe the pan clean and add remaining 1/4 cup fat between batches), sear the beef, turning with tongs, until golden brown on all sides, about 8 minutes per batch.
  4. Transfer the meat to a large bowl. Do not clean the skillet.
  5. Add the onions, carrots, and celery to the pot.
  6. Over moderately high heat, sauté until the vegetables and apples start to soften, about 15 minutes.
  7. Add the wine and bring to a boil, scraping up any browned bits.
  8. Add the tomato, garlic, bay leaves, herbs, then return the meat, along with any accumulated juices, to the pot.
  9. Make sure the meat is completely covered with liquid; add water or beef stock if necessary.
  10. Transfer mixture to slow cooker and braise for 2-4 hours, or until the meat is very tender and beginning to fall apart.
  11. Season with salt and pepper and add vinegar and lemon juice if desired.
