Blood Orange Glazed Scallops

Blood Orange Glazed Scallops


  • Zest Of 5 Blood Oranges
  • 1 Tbsp Salt
  • 1/2 Tbsp Freshly Ground Black Pepper
  • 16 Sea Scallops
  • 1/2 Cup Chicken Stock
  • Juice Of 5 Blood Oranges
  • 1 Tbsp Ghee Or Coconut Oil


  1. Preheat the oven to 375
  2. In a ramekin, combine the zest, salt, and pepper. Rub the mix into the scallops and set aside to rest for 30 minutes.
  3. While the scallops are resting, simmer the stock and blood orange juice in a small sauce pot over high heat for 20 minutes, or until reduced by half, then remove from heat and set aside.
  4. Be careful when reducing as the juice can boil over easily.
  5. In a cast iron pan over medium-high heat, add the ghee.
  6. Once the pan is hot, sear the scallops on one side until golden-brown, then flip over and cook for 1 minutes on the other side.
  7. Serve with the glaze on the side or poured on top along with your favorite blend of seasonal greens and chunks of roasted veggies.
