Here’s a healthy and delicious video teaching you to perfectly sear a scallop and prepare a blood orange reduction.
Blood Orange Glazed Scallops
Ingredients
- Zest Of 5 Blood Oranges
- 1 Tbsp Salt
- 1/2 Tbsp Freshly Ground Black Pepper
- 16 Sea Scallops
- 1/2 Cup Chicken Stock
- Juice Of 5 Blood Oranges
- 1 Tbsp Ghee Or Coconut Oil
Instructions
- Preheat the oven to 375
- In a ramekin, combine the zest, salt, and pepper. Rub the mix into the scallops and set aside to rest for 30 minutes.
- While the scallops are resting, simmer the stock and blood orange juice in a small sauce pot over high heat for 20 minutes, or until reduced by half, then remove from heat and set aside.
- Be careful when reducing as the juice can boil over easily.
- In a cast iron pan over medium-high heat, add the ghee.
- Once the pan is hot, sear the scallops on one side until golden-brown, then flip over and cook for 1 minutes on the other side.
- Serve with the glaze on the side or poured on top along with your favorite blend of seasonal greens and chunks of roasted veggies.
