Fresh Berries with Coconut Whipped Cream and Dark Chocolate

Antioxidant-rich berries and chocolate, lots of healthy fat, and very little sweetener. Simply perfect!

Fresh Berries with Coconut Whipped Cream and Dark Chocolate

Fresh Berries with Coconut Whipped Cream and Dark Chocolate

Ingredients

  • 3 cans full fat coconut milk (I've started using Native Forest brand bc the can is BPA-free)
  • ¼-1/3 cup coconut sugar
  • ½ vanilla bean, seeds scraped

Instructions

  1. Chill the cans of coconut milk overnight in the fridge.
  2. Open the cans, scoop off solid cream from top of can into a chilled metal bowl.
  3. Reserve remaining liquid for another use (like a smoothie).
  4. Beat the thick coconut cream with a hand mixer until thick and fluffy.
  5. Add the vanilla, then gradually beat in the coconut sugar and vanilla bean scraping.
  6. Serve immediately.
