Here’s a simple and totally delicious way to turn up the flavor of sweet potatoes.
This is a great side dish for almost any dinner and one even the pickiest eaters are sure to love.
Ginger Orange Mashed Sweet Potatoes
Ingredients
- 2 pounds sweet potatoes
- 1/2 cup butter
- 3 tbsp orange juice
- 1 tbsp honey
- 2 tsp freshly grated ginger
- 1 tsp orange zest
- Salt and pepper to taste
Instructions
- Preheat the oven to 375 degrees.
- Place the potatoes on a foil lined baking sheet and bake until tender and begins to ooze sugary syrup, about 1 hour.
- Remove from the oven and let sit until cool enough to handle.
- Cut the potatoes in half lengthwise and scoop out the flesh with a spoon into a large bowl.
- Add the butter, honey, juice, zest, ginger, salt and pepper, and mix with a food processor, fork, masher or hand mixer until smooth.
- Cover to keep warm until ready to serve.
