Ginger Orange Mashed Sweet Potatoes

Here’s a simple and totally delicious way to turn up the flavor of sweet potatoes.

This is a great side dish for almost any dinner and one even the pickiest eaters are sure to love.

Ginger Orange Mashed Sweet Potatoes

Prep Time: 10 minutes

Cook Time: 1 hour

Total Time: 1 hour, 10 minutes

Ginger Orange Mashed Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes
  • 1/2 cup butter
  • 3 tbsp orange juice
  • 1 tbsp honey
  • 2 tsp freshly grated ginger
  • 1 tsp orange zest
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375 degrees.
  2. Place the potatoes on a foil lined baking sheet and bake until tender and begins to ooze sugary syrup, about 1 hour.
  3. Remove from the oven and let sit until cool enough to handle.
  4. Cut the potatoes in half lengthwise and scoop out the flesh with a spoon into a large bowl.
  5. Add the butter, honey, juice, zest, ginger, salt and pepper, and mix with a food processor, fork, masher or hand mixer until smooth.
  6. Cover to keep warm until ready to serve.
