Pineapple Fried Cauliflower “Rice”
Ingredients
- 2 tbsp coconut oil, ghee or butter
- 1 large head cauliflower, large stem removed and cut into florets
- 1 cup zucchini, chopped
- 1 cup assorted bell pepper, chopped
- 1 cup fresh pineapple, chopped according to video
- 1 large bunch cilantro, stems removed and leaves roughly chopped
- 1/2 cup green onions tops, chopped
- 1/2 cup slivered almonds
- 2 tbsp fresh lemon or lime juice
- Salt and pepper to taste
Instructions
- Pulse cauliflower florets in small batches in food processor (about ?- ½ full) until the size of cous-cous.
- Preheat large skillet over medium heat and add cooking fat.
- Add chopped zucchini and peppers and cook 2 minutes then add cauliflower rice.
- Season with salt and pepper and cook about 5-7 minutes, stirring frequently to prevent burning and sticking.
- Add almonds, cilantro, lemon/lime juice and green onions and pineapple.
- Season again with salt and pepper.
