Pineapple Fried Cauliflower “Rice”


  • 2 tbsp coconut oil, ghee or butter
  • 1 large head cauliflower, large stem removed and cut into florets
  • 1 cup zucchini, chopped
  • 1 cup assorted bell pepper, chopped
  • 1 cup fresh pineapple, chopped according to video
  • 1 large bunch cilantro, stems removed and leaves roughly chopped
  • 1/2 cup green onions tops, chopped
  • 1/2 cup slivered almonds
  • 2 tbsp fresh lemon or lime juice
  • Salt and pepper to taste


  1. Pulse cauliflower florets in small batches in food processor (about ?- ½ full) until the size of cous-cous.
  2. Preheat large skillet over medium heat and add cooking fat.
  3. Add chopped zucchini and peppers and cook 2 minutes then add cauliflower rice.
  4. Season with salt and pepper and cook about 5-7 minutes, stirring frequently to prevent burning and sticking.
  5. Add almonds, cilantro, lemon/lime juice and green onions and pineapple.
  6. Season again with salt and pepper.
