Paleo Caesar Salad with Salmon

This is a delicious new take on an old favorite: pine nuts replace croutons, avocado replaces cheese, and kale is swapped for romaine to make this a nutritional powerhouse.

Paleo Caesar Salad with Salmon

Paleo Caesar Salad with Salmon

Ingredients

  • 4 4oz filets Wild Alaskan Salmon
  • 1 bunch romaine, washed and chopped
  • 1 bunch spinach, washed and stems removed or 3 cups baby spinach
  • 1 large ripe tomato
  • 4 eggs, hard-boiled
  • 1 cup pine nuts, toasted
  • 1 large or 2 small ripe but firm avocados, cut into chunks
  • 4 anchovy fillets
  • 2 egg yolks
  • 2 garlic cloves
  • 2 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1/2 cup extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. In a small food processor, mix egg yolks, garlic and anchovies into a paste.
  2. Add remaining ingredients except olive oil. Mix a few seconds.
  3. Slowly add olive oil until dressing is thick and creamy. (Add more or less olive oil depending on desired consistency.)
  4. Season to taste with salt and pepper.
  5. Sear Salmon
  6. In a large bowl, toss lettuce and spinach with dressing, pine nuts, and avocado chunks.
  7. Season to taste with salt and pepper.
  8. Serve with egg and tomato slices.
