This is a delicious new take on an old favorite: pine nuts replace croutons, avocado replaces cheese, and kale is swapped for romaine to make this a nutritional powerhouse.
Paleo Caesar Salad with Salmon
Ingredients
- 4 4oz filets Wild Alaskan Salmon
- 1 bunch romaine, washed and chopped
- 1 bunch spinach, washed and stems removed or 3 cups baby spinach
- 1 large ripe tomato
- 4 eggs, hard-boiled
- 1 cup pine nuts, toasted
- 1 large or 2 small ripe but firm avocados, cut into chunks
- 4 anchovy fillets
- 2 egg yolks
- 2 garlic cloves
- 2 tbsp lemon juice
- 1 tbsp dijon mustard
- 1 tbsp Worcestershire sauce
- 1/2 cup extra virgin olive oil
- salt and pepper to taste
Instructions
- In a small food processor, mix egg yolks, garlic and anchovies into a paste.
- Add remaining ingredients except olive oil. Mix a few seconds.
- Slowly add olive oil until dressing is thick and creamy. (Add more or less olive oil depending on desired consistency.)
- Season to taste with salt and pepper.
- Sear Salmon
- In a large bowl, toss lettuce and spinach with dressing, pine nuts, and avocado chunks.
- Season to taste with salt and pepper.
- Serve with egg and tomato slices.
