Seared Chicken With Creamy Tomato Sauce

Seared Chicken With Creamy Tomato Sauce


  • 1 tbsp fat (bacon fat, coconut oil or ghee)
  • 4 boneless, skinless chicken breasts, washed and well dried
  • 1 onion, roughly chopped
  • 2-3 fresh tomatoes, roughly chopped
  • 2-4 cloves garlic
  • 2 tbsp ginger, roughly chopped
  • 1/2 cup raw cashews, soaked at least 3 hours, rinsed and drained
  • water, as needed
  • salt and pepper to taste


  1. Preheat a large, thick-bottomed skillet or pot (make sure it has a lid) on medium-high heat.
  2. Add fat.
  3. Sprinkle chicken with salt and pepper and sear on both sides until a nice brown forms, 2-3 minutes per side.
  4. Add onions and brown another minute.
  5. Add tomatoes, garlic, ginger, some salt and pepper, cover and turn heat to medium-low.
  6. Cook covered until chicken is cooked through and tomatoes and onions are cooked, another 5-8 minutes.
  7. Remove chicken to a plate and cover to keep warm.
  8. Put all of the veggies and juices into the blender, add cashews and blend, thinning with water as needed.
  9. Season to taste with salt and pepper. Drizzle over chicken and eat with your favorite sides.
