Spinach Salad with Warm Bacon Dressing

Pairs well with grilled steak or chicken as a main dish, too!

Spinach Salad with Warm Bacon Dressing

Spinach Salad with Warm Bacon Dressing


  • 8 bacon slices
  • 2 tbsp sherry vinegar
  • 2 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 8 cups organic baby spinach
  • As Needed: Extra virgin olive oil, salt and pepper


  1. Chop bacon and fry in a skillet over medium heat.
  2. Remove from heat and add, vinegar, lemon and mustard. Toss with spinach and season to taste with salt and pepper.
  3. Add olive oil if you want extra fat than what bacon provided.
  4. Note: To make your salad even more exciting, add chopped red onion, sauteed mushrooms, chopped bell peppers, fresh herbs, or anything you like in your salad!
