How can you go wrong with a salad dressed with warm bacon?
It’s just as satisfying and delicious as you’d imagine!
Pairs well with grilled steak or chicken as a main dish, too!
Spinach Salad with Warm Bacon Dressing
Ingredients
- 8 bacon slices
- 2 tbsp sherry vinegar
- 2 tbsp lemon juice
- 1 tbsp dijon mustard
- 8 cups organic baby spinach
- As Needed: Extra virgin olive oil, salt and pepper
Instructions
- Chop bacon and fry in a skillet over medium heat.
- Remove from heat and add, vinegar, lemon and mustard. Toss with spinach and season to taste with salt and pepper.
- Add olive oil if you want extra fat than what bacon provided.
- Note: To make your salad even more exciting, add chopped red onion, sauteed mushrooms, chopped bell peppers, fresh herbs, or anything you like in your salad!
