Trying to kick your sugar out of your diet but still want to enjoy a tasty treat? This recipe is creamy and smooth, but won’t sabotage you!
Strawberry Avocado Mousse
Ingredients
- 1 ripe avocado
- 1 cup coconut cream
- 1 1/2 tsps monk fruit extract or 8-15 drops stevia liquid
- 1 cup strawberries, hulled and cut in half
- 1/2 tsp lemon juice
Instructions
- Combine avocado and strawberries in food processor and chop to combine.
- Add coconut cream, lemon juice and monk fruit or stevia.
- If using stevia, start with less and add until desired sweetness achieved.
- Blend until light and fluffy.
- Divide among 4 bowls and refrigerate at least 1 hour before serving.
- Garnish with a whole or sliced strawberries.
