    For Steak:
  • 4 grass-fed steaks
  • Small handful: fresh basil leaves
  • Small handful: cilantro
  • 4 cloves garlic, finely chopped
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • 1/4 cup coconut oil
  • For Red Curry Mayo:
  • 1/2 cup Primal Kitchen Mayo (
  • 1-2 tbsp red curry paste (I like Thai Kitchen brand)
  • 1-2 tsp lime juice
  • For Salad:
  • 2 cups grated carrots
  • 2 tbsp finely chopped red onion
  • 1 jalapeno pepper, seeded and finely chopped
  • Small handful of parsley or cilantro leaves, coarsely chopped
  • 2 tbsp lime juice
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • 1/4 tsp coriander
  • 1/4 tsp salt

    For the Steak:
  1. Combine all ingredients for the marinate in a blender or food processor and blend until herbs are finely chopped.
  2. Marinate steaks for at least 4 hours and up to 12 hours.
  3. Wipe marinate off and set aside.
  4. Season steaks with salt and pepper and cook on a medium-high heat grill for about 4-8 minutes per side (depending on thickness), or until desired doneness achieved.
  5. Optional: In a separate saucepan, heat marinate to kill any bacteria and spread over cooked steak.
  6. For the Red Curry Mayo:
  7. Whisk ingredients together and serve over steak just before eating.
  8. This simple recipe is great for sandwiches, lettuce wraps, dipping with artichokes...anything you want to make more tasty 🙂
  9. For the Carrot Salsa:
  10. Chop first 4 ingredients by hand or with food processor (as shown in video) and add to a bowl. Add remaining dressing ingredients and season to taste with salt and pepper.
